# Helpful Tips:

01 -
  • The bright lemon and herbs make even the most basic fish fillet feel like something you'd order at a nice restaurant
  • It comes together in under 30 minutes but tastes like you spent much longer thinking about it
02 -
  • Overcooked fish is dry and disappointing, so start checking at the 15 minute mark, even if the recipe says 20
  • Patting the fish dry might seem like an extra step, but it's the difference between roasted fish and steamed fish
03 -
  • Room temperature fish cooks more evenly than cold straight from the fridge, so let it sit out for 15 minutes before cooking
  • A hot baking dish helps sear the fish immediately, creating better texture and keeping the juices inside
