01 - Preheat oven to 350°F. Line a 9x5-inch loaf pan with parchment paper or grease thoroughly.
02 - In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.
03 - In a large bowl, mash the bananas. Add the grated carrots, brown sugar, oil, eggs, vanilla extract, and milk. Mix until fully combined.
04 - Gently fold the dry ingredients into the wet ingredients, mixing just until no dry streaks remain. Do not overmix.
05 - Fold in the nuts and raisins if using.
06 - Pour the batter into the prepared loaf pan and smooth the top evenly.
07 - Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out mostly clean. A few moist crumbs are acceptable.
08 - Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
