01 - Preheat the oven to 425°F. Line a large baking sheet with parchment paper or foil for easy cleanup.
02 - Spread the frozen tater tots in a single layer on the prepared baking sheet. Bake for 20-25 minutes, turning halfway through, until golden brown and crispy throughout.
03 - While tater tots bake, place diced beef bacon in a skillet over medium heat. Cook for 5-7 minutes, stirring occasionally, until crispy and browned. Drain on paper towels to remove excess grease.
04 - Remove the crispy tater tots from the oven. Sprinkle cheddar and mozzarella cheeses evenly over the hot tots. Return to the oven and bake for 3-5 minutes until cheese is fully melted and bubbly.
05 - Remove from oven and immediately top with crispy beef bacon bits and sliced spring onions while hot.
06 - Transfer to a serving platter. Add dollops of sour cream across the top and finish with freshly ground black pepper and optional fresh herbs. Serve immediately while hot and crispy.
