# How to Make:

01 - Line a brain-shaped silicone mold with plastic wrap, or use a medium oval bowl lined with plastic wrap to prepare for assembly.
02 - Crush graham crackers into fine crumbs using a food processor. Combine with melted butter and press mixture firmly into the base of the prepared mold. Refrigerate while preparing filling.
03 - Blend hulled strawberries with granulated sugar until completely smooth. Heat water in a small saucepan, sprinkle gelatin powder over surface, let bloom for 5 minutes, then warm gently until fully dissolved. Stir gelatin mixture into strawberry puree and set aside to cool to room temperature.
04 - Beat cream cheese and powdered sugar together until smooth and creamy. In a separate bowl, whip heavy cream to soft peaks. Fold whipped cream into cream cheese mixture along with vanilla extract. Gently fold in cooled strawberry gelatin mixture until uniform color is achieved.
05 - Pour strawberry cheesecake filling into mold over prepared crust. Smooth top surface with spatula. Refrigerate for at least 5 hours or overnight until completely set.
